Donate to a green charity - Rather than physical wedding favors for the guests, why not instead donate a sum of money to a charity close to your heart. Simply leave cards on the tables to let the guests know that you have done this without having to state the value of your donation.
Give Eco gifts - Why not hand out Eco gifts rather than favors. These don't need to look pretty, for example you could try a bag for life or a recycled item. If you do want to give a treat, opt for fair trade chocolate or if you can't resist, get the bags stamped with a special message for a fairly low cost.
Give a green reminder of your day - Why not opt for small plants or even seeds that will grow into a long lasting memory of your special day, perfect for all seasons as well.
